Guido_Bitossi Knife Enthusiast Registered: 09/22/05 Posts: 2779 Loc: Florence, Italy	Culinary tip for Duke: Once you sized peaches as you did...put in a deep basin...add 2 or 3 spoons of sugar...than cover everything with a "not so expansive" red wine...let it marinate for few hours in the fridge...serve it with some mint leaves or...fresh basil... Best of the best is using...yellow peach "settembrine"....those mature now in September...
