I've used larger knives for the initial tummy cut, but mostly use a sharp pocket knife with my trigger finger on the point, then go from the sternum to the crotch.

Yes, Green River no doubt made this design first, but I know this one was a Case, because about 10 of us bought from the same hardware store.
