The "best" answer I can give you, Doug, is: "Good wood is good wood"! When I buy handle material I try to look the pieces over...from "all" angles. Below if a piece of incredible redwood burl. Does anyone think there would be a bad handle shape for this bad boy?
On the other hand, if your piece of walnut does not an incredible amount of figuring and character, chose a handle shape that, if installed a certain way, will bring out the best. For example: If there is some nice figure on one side, mark the material so that side is showing (trademark side of the blade) when displayed. Perhaps finger grip installed that on that particular side will augment the grains even more so? Try to see the finished picture in your mind's eye. Either way, this handle is "yours" and came from your efforts. It will always be a special knife to you...and that's what really counts!
