Not trying to be contrary, but how about, black micarta, brass single hilt, red spacers and wrist thong to match the new Chef's knife?
Would make a nice set I think.

I vote the same way. While I like the Stag Carver's set a lot I would actually use a black micarta set with a Chef's Knife much more. Then the question would be how to order the Black Micarta #6 grind "plate knives"

You know, with such a beautiful carving set, it's too bad RMK or someone doesn't offer a nice wooden block holder so we could display them on the counter or table. Instead, we must place them in the cloth wrap-up and stuff in a drawer. Wouldn't those stag handles look nice sticking out of a nice maple block??
