Hey Guys,
I need some advice. My young Godson/Nephew is a new butcher and is looking
for some good knives.
I know there is always the Randall Carving Set. But is there a place that he might find
knives specifically made for a butcher who will be using them day in and day out.
He does everything from breaking down whole carcasses to trimming out smaller pieces for sale.

Check with your local butcher. Also: Check the docks and see where the mates are getting their filet/boning knives. Often there is a service involved. A company who services these accounts. Forschner, Chicago Cutlery and others are used by these guys. Sometimes they sell "re-grinds" also. You may be surprised at what you can find. In an exotic location...such as a really "long" island...I'm sure such a service is available.

Hey Toni, as usual the Capt. knows what he ' s talking about with this. When I've been lucky enough to get down to the Outer Banks of NC any time over the past 40 or so years I always go by the "non-tourist" docks to buy the freshest of everything while there and have picked up 1or 2 knives while there(every year). The refurbished knives that the everyday working pros use can't be beat and neither can the conversation while there. These folks don't use dull, sorry blades!
And by the way I also can't imagine my BoSox going down again this season like this past weekend. That is what you mean't isn't it?

Dexter-Russell brand seems to show up, whether over at the Port of Canaveral or at a processor in the Rockies. They must have something going for them.
