I think the edge bevel angle depends on the use that you plan for your knife. A utility knife needs a larger (more blunt) angle to preserve its cutting edge in tough materials. Special uses may require something much thinner. For example, the Model 1 that I carried in Germany was sharpened with a fairly thin edge to maximize its edge sharpness. There was always someone who asked "How sharp is that knife?"--- my left forearm was usually bare due to my giving a demonstration of shaving the hair off. This was a fighting knife and its edge requirements were somewhat unique.
