Basically a 10-3 or a little bigger a 10-5 will fill the bill for just about anything.

Like I said before,my Old Style Model 8 has filled the bill for me for many years and if you want to go a little fancier maybe a Mini Model 27.

No need for a long thick blade. I knew of a n Alaskan Guide that used a Case folding trapper for everything from moose,bear,elk etc and had no problems.

Cutting of bones?? That is what a saw is for.
