OK Crew,
We are building a N.Y. applicable build, as far as a single sharpened edge is concerned. The Alaskan Skinner, in a 4 inch blade length rocks...and thumb notches are standard, saving us one of those 5 precious options! A lot to still discuss before this #11 goes to forge. Try to always keep in mind that there are always new members who:
* May not know how the build progresses
* May not have vast knowledge as to the functionability of a #11. Let's help them, along the way, to the completion of this fine build!
We could start by our impression of what would make the ideal blade steel...and "why". 2 are available. The Alaskan is hand forged from:
* Either O1 tool steel (a carbon steel)
............OR..........
* 440B (a stainless steel)
From a personal view, I have used both with equally fantastic cutting results...if not the exact "other" results. "That's" where we should start our discussion, if you're so inclined. We would all love to hear your actual "experience" with these 2 steels...not necessarily what you've "heard".

Same here, more of an O-1 carbon steel fan, plus it doesn't count as an option.

I also like 0-1 for a user because of the patina it gets. But for safe queens, stainless is obviously easier to care for. If this knife goes to me, I will use it, so my vote is for 0-1.
