I had a whole fried red snapper in Aruba years ago. Looked great, what a presentation. I wished it tasted as good but wasn't.

#1 -- flounder -- fried or grilled whole
#2 -- red snapper -- just about any way you want to do it
#3 -- red fish -- grilled, prefer the backbone

Honorable mention and not a common choice -- king mackerel but only if same day caught, steaked and grilled; or, smoked and made into fish dip

FRESH is the huge big deal for me for any fish

Pap,

PITA to open, but no not swimmers. Dad had a special Craftsman screwdriver bent and ground to open oysters. Should have a patent on it, worked like a charm.
Should have seen what we used on bay scallops. Grapefruit knives were the ticket.
