Warren: I know exactly what you are talking about and I don’t care for anyone else’s but mine.

At our Reunion, I started off with 5 gallons of cottonseed oil in an 8 gallon cast iron wash pot. I fried 5 gallons of catfish fillets. When I poured the used cs oil back into the jug when I finished, it filled the jug back to the original level. There was not any grease spots on the paper towels in the pans either.

If you fry catfish at 350, in small batches, in cottonseed or soybean oil, and let it drip while in the wire basket, it will NOT be greasy or oily like you are talking about.

Peanut oil hurts me and that’s why we NEVER go out to eat catfish.

LOL to funny.

Coach had to filet the snapper filets. The meat on the lane snappers were just as good as the reds.
But those speckled trout are hard to beat.

Here fresh tuna is what everyone likes........and me a salmon guy go figure.

Of course I should have mentioned sheep-head as a good eating fish.......the sheep-head filet gets one small piece cut off & it gets passed off as snapper in a lot of restaurants.
