Chief cooked up some red beans and rice and had so much that he sent some ingredients north. (You know where we think that salt and pepper are spices) We had so many beans that they over filled the jar. All anyone has to do is guess how many beans are in the jar. Hint: Things are not always as they seem. Rules: One guess per member. The one closest to the correct number of beans will be the winner and get her/his choice of wood. (Palm or Amboyna )The other block of wood will be given to the member who comes in fourteenth . The winners will be announced All Hallow's Eve. We hope that that you all participate and have fun. Post your guess, and if you have any questions please PM me. This is a Chief Red Bean production. This game cannot be reproduced without the expressed permission of The Red Bean Counters of America. (Void where prohibited by law)

Kevin, Great contest! Deep East Texas is just on the edge of Red Beans and Rice country. One question please. Is this contest on the up and up or is there something else in the jar besides red beans?

1 pound dried red beans, rinsed and sorted over 3 tablespoons bacon grease 1/4 cup chopped tasso, or chopped ham 1 1/2 cups chopped yellow onions 3/4 cup chopped celery 3/4 cup chopped green bell peppers 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper Pinch cayenne 3 bay leaves 2 tablespoons chopped fresh parsley 2 teaspoons fresh thyme 1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces 1 pound smoked ham hocks 3 tablespoons chopped garlic 10 cups chicken stock, or water 4 cups cooked white rice 1/4 cup chopped green onions, garnish
Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside. In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.) Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves. Serve over rice and garnish with green onions.

Red Beans & Rice is a Monterey Bay based blues band specializing in up-tempo danceable blues. Formed in 1993, their blend of Chicago, Texas swing, Louisiana, contemporary and original music has garnered them numerous awards. Performing throughout the West Coast at various Festivals and venues, Red Beans & Rice has shared the stage with some of the greats in blues and has released three self-produced albums containing their unique original compositions as well as some covers of lesser known classics.
A hearty basic meal, Red Beans & Rice is served throughout the South in a variety of ways. The dish can be best described as a “spicy Southern staple”. So it is with the music of Red Beans & Rice. A Southern staple served in a variety of spicy ways.

Kevin, After closer inspection with the selectron microscope I have detected a couple of floaters. I want to change my guess to 115. If Chief has cooked enough beans he knows what floaters are.

Not so fast, my friend. The Red Beans in that jar look like the genus/species Halitosis hemophiliosis. Down here in Polk County, our Red Beans are Malecamaleca Leucalucadendron. I demand a recount !!!!!! Dubie Baxter

Dubie, If memory serves me correctly, the Malecamaleca Leucalucadendron that you are used to are much smaller beans. So small that they don't take up much room, which is probably why you guessed "0"... I can see why you would mix them up like that. I feel for you, and personally I think the whole thing was a trick to throw you off. ~dale P.S. Congrats! on winning guys. Those blocks will make some nice handles!

Thanks Kevin for running that competition and thanks Chief for donating the prizes, congratulations to Dick Roberts for taking second (14th) prize.
I guess I’ll go for the Amboyna.
Dubie I very carefully calculated the number of beans in the jar using LWG method; you cannot use this method on knives as they don't pack evenly in to a given space. I would be very happy to count the knives in Guidos' collection but I would have to do it by hand and in person. So if you would like to start collecting for my trip to Italy, I’d be happy to do my part.

Good try, but the only way we would do that is if you promised to visit Guido, then personally deliver a knife to a G.I, or Aussie in Iraq or Afghanistan.
Don't laugh, as you well know, we can get up for this sort of mission.

Graham,
"In gemology, chatoyancy (pronounced / shə-TOY-ən-see), or chatoyance, is an optical reflectance effect seen in certain gemstones. Coined from the French "œil de chat," meaning "cat's eye," chatoyancy arises either from the fibrous structure of a material, as in tiger eye quartz, or from fibrous inclusions or cavities within the stone, as in cat's eye chrysoberyl. The effect can be likened to the sheen off a spool of silk: The luminous streak of reflected light is always perpendicular to the direction of the fibres. For a gemstone to show this effect best it must be cut en cabochon, with the fibers or fibrous structures parallel to the base of the finished stone. Faceted stones are less likely to show the effect well."
That's a "gem" of a knife.
